Ingredients:


 
                    1 kg pumpkin (unpeeled)

3 medium potatoes

1 carrot

1 onion

2 garlic cloves

½ cup cream

2 cups water (approximately 450 ml)

Salt

Pepper

Spices to taste
                

Instructions:


 
                Step 1
Peel the pumpkin, remove seeds, and cut into large chunks.

Step 2
Peel the potatoes and cut them into cubes.

Step 3
Peel the carrot and grate it on a coarse grater. Finely chop the onion and garlic.

Step 4
In a pan, sauté the onion in vegetable oil. Add the carrot and garlic, and cook for a few more minutes until softened.

Step 5
Place the potatoes and sautéed vegetables in a pot.

Step 6
Using the same pan, sauté the pumpkin for about 5 minutes until it softens slightly.

Step 7
Add the pumpkin to the pot with the other vegetables and pour in enough water to just cover them.

Step 8
Cook the soup over medium heat without a lid for 30-40 minutes, until the potatoes are tender.

Step 9
Using a blender, puree the soup until smooth.

Step 10
Pour in the cream, season with salt, pepper, and your preferred spices.

Step 11
Stir thoroughly and let the soup simmer for another 5 minutes. Then cover the pot and allow the soup to rest before serving.
