Pumpkin Bread

Ingredients:
600 grams of pumpkin (300 grams of pumpkin puree) 200 grams of flour 1 teaspoon of baking powder ½ teaspoon of salt 2 teaspoons of ground cinnamon ½ teaspoon of vanilla sugar 120 milliliters of vegetable oil 100-150 grams of sugar 2 eggs 60 milliliters of milk 50 grams of chocolate chips or nuts (pecans)
Instructions:
Step 1 Wash the pumpkin, peel it, and remove the seeds. Cut it into small pieces. Place the pumpkin pieces in a saucepan with 200 ml of water and bring to a boil. Cook for 10 minutes after boiling, then cover with a lid and cook for another 10 minutes. Mash the cooked pumpkin with a fork or mixer until smooth to make a puree. Step 2 In a bowl, mix together the flour, baking powder, salt, vanilla sugar, and cinnamon. Step 3 In another bowl, whisk the sugar and eggs using a fork or whisk. Add vegetable oil and milk, and mix well. Step 4 Add the pumpkin puree and stir until well combined. Step 5 Gradually add the flour mixture and mix thoroughly. Step 6 Optionally, stir in the chocolate chips or pecans. Step 7 Line a bread pan with parchment paper and pour the mixture into the pan. Step 8 Bake at 180°C (with convection) on the middle rack for 60 minutes. If the top of the pumpkin bread starts to burn, cover it with parchment paper or foil after about 40 minutes.
