Salmon in Teriyaki Sauce

Ingredients:
300 grams of salmon Teriyaki Sauce: 100 grams of soy sauce 50-70 grams of mirin 2 tablespoons of sugar 4-5 slices of ginger root 1 clove of garlic 1 teaspoon of lemon juice 2-3 slices of lemon zest 1 teaspoon of cornstarch/potato starch Salad: 50 grams of arugula 10 cherry tomatoes ½ avocado 1 clove of garlic olive oil salt/pepper
Instructions:
Step 1 In a saucepan or pot, mix the soy sauce and mirin. Step 2 Slice the ginger into thin pieces (4-5 slices) and add them to the sauce. Step 3 Slice the garlic into thin pieces and add them to the sauce as well. Step 4 Add the sugar and lemon juice to the sauce and a little lemon zest. Step 5 Bring the sauce to a boil. Step 6 Mix the cornstarch/potato starch with water (1 tablespoon) and add it to the sauce. Cook until the sauce thickens. Step 7 Allow the sauce to cool and strain it through a sieve to remove the garlic, ginger, and lemon zest. The sauce is ready. Step 8 Create a baking form with foil sides to prevent the sauce from spilling onto the baking sheet. Place parchment paper inside the form and add a little olive oil. Step 9 Rinse the salmon and place it on the parchment paper. Spread the salmon with the teriyaki sauce using a spoon or brush. Step 10 Place the baking sheet in a preheated oven at 220 degrees Celsius (428 degrees Fahrenheit) for 5 minutes. Step 11 After 5 minutes, take out the baking sheet and spread the salmon with teriyaki sauce again. Return it to the oven for another 5 minutes at 220 degrees Celsius (428 degrees Fahrenheit). Step 12 Preparing the salad: Slice cherry tomatoes, add crushed garlic, mix with olive oil, and season with salt and pepper to taste. Allow it to sit for a little while. Step 13 Add arugula to the salad and mix everything well. Slice the avocado into thin slices. Step 14 Serve the salmon with the salad and avocado. Optionally, sprinkle sesame seeds on top.
